4.38 lb. Flaked rye
Mash: 75% efficiency
Protein rest @ 124°F for 30 minutes
Raise to 150°F for 15 minutes
Raise to 155°F for 45 minutes (or until conversion is complete)
Mash out at 168°F for 5 minutes
Mash pH 5.02-5.1
Boil: 60 minutes SG 1.048 9.0 gallons
3/4 tsp Irish Moss last 15 min. of boil
Hops: 2.37 oz. Hallertauer (4.25% AA, 60 min.)
1.02 oz. Hallertauer (4.25% AA, 30 min.)
1.02 oz. Hallertauer (4.25% AA, 15 min.)
0.77 oz. Saaz (aroma)
0.77 oz. Tettnanger (aroma)
Yeast: Fermented first week with lager yeast at 75°F, pitched with
American Ale (1056) yeast and fermented additional week at
75°F.
Log: Rye caused all sorts of stuck runoffs. Increasing the porosity of
the mash with rice hulls (~5% of grist) is recommended.
Carbonation: Force carbonated in keg.
Tasting: Finished keg in 4 days, outstanding beer! Modertly sweet, medium body, and highly perceptible bitterness.
