A variation of the Barkshack Gingermead

0 HCU (~0 SRM)
Bitterness: 0 IBU
OG: 1.097 FG: 1.000
Alcohol: 12.5% v/v (9.8% w/w)
Water: Charcoal filtered tap
Boil: 15 minutes SG 1.259 1.5 gallons
2 lb. Corn sugar
7.5 lb. Honey
add 1 oz fresh grated ginger, 1/2 tsp Irish Moss, 1 tsp acid blend, 3 tsp yeast nutrient, corn sugar, & honey to 1.5 gal water and boil 15 minutes. 1lb strawberries, two medium pears, 5 kiwi fruits and 1 large can of peaches, (heavy syrup, syrup added to boil). Dice fruit and add AFTER boil; let steep 15 minutes. Add wort (unsparged) to 3 gal's water. Aerate well.
Hops:
Yeast: Wyeast Dry Mead. (3632)
Log: 7 days primary, up to a month secondary (FG ~1.000) Bottle with 3/4 cup corn sugar. Age minimum of 6 months... Will keep indefinently.
Carbonation: 3.0 volumes Corn Sugar: 4.07 oz. for 3.5 gallons @ 70°F
