Our malty version of those pumpkin beers you see in the fall

27 HCU (~14 SRM)
Bitterness: 23 IBU
OG: 1.053 FG: 1.010
Alcohol: 5.5% v/v (4.4% w/w)
Grain: 1 lb. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
4 oz. Belgian CaraVienne
1 oz. British chocolate
5 lb. Pumpkin
Steep: Gut a large pumpkin or 2 medium sized, cut the meat of it into small cubes and place on pyrex casserole dish. Bake @ 350°F for 60 minutes or until it is lightly browned. Stir with a wooden spoon till a lumpy mush is achieved. Mash with other grains @ 155°F for 45 minutes, sparge with 170°F H2O.
Boil: 60 minutes SG 1.041 6.5 gallons
6 lb. 8 oz. Light malt extract
Put a tiny(non-measurable) pinch of cinnamon and nutmeg in at beginning of boil. Then with 15 minutes left add 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/4 tsp. ginger and a whirlfloc tab.
Hops: 1 oz. Willamette (5% AA, 60 min.)
.5 oz. Hallertauer Hersbrucker (5% AA, 15 min.)
.5 oz. Hallertauer Hersbrucker (aroma)
Yeast: White Labs California Ale Yeast. Make a 1 pint starter.
