Bitterness: 54 IBU
OG: 1.067 FG: 1.012
Alcohol: 7.0% v/v (5.5% w/w)
Water: Add a teaspoon or so of gypsum if you like.
Grain: 1 lb. Wheat Malt
0.5 lb. American Crystal 20L
1 lb. Flaked Oats
1 lb. Flaked Rice
1 lb. Flaked Rye
Steep: Steep grains for the typical 45 minutes @ 155° F.
Boil: 60 minutes SG 1.067 5 gallons
6 lb. Light LME
1 lb. Light DME
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 1 oz. Cluster (7% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
1 oz. Willamette (5% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast #1335 British II
Log: The last hop addition (aroma) is actually a dry hop to the secondary.
Carbonation: Bottle using brown sugar or force carbonate in a keg.
