Summer Time Wheat

Trying for a KICK-ASS summer time, sitting by the lake, pole in the water, tasty brew in hand kind of beer. Looks good so far, will keep you posted.

Alcohol: 7.9% v/v (6.2% w/w)
Water: Just good bottled water.
Grain: 4.91 lb. American 2-row
3.94 lb. Wheat malt
7.8 oz. American crystal 60L
7.8 oz. Dextrine malt (Cara-Pils)
Mash: 77% efficiency
Mash in at 165F for one hour (Oatmeal consistancy)
Sparge out at 170F slowly until clear. (got 4 gallons)
Boil: 60 minutes SG 1.102 3.5 gallons
2.02 lb. Honey
Good sized pinch of Irish Moss last 15 minutes
2lbs of wild flower honey at 30 minutes
Hops: .75 oz. Hallertauer (4.5% AA, 60 min.)
.75 oz. Hallertauer (4.5% AA, 30 min.)
.75 oz. Hallertauer (4.5% AA, 10 min.)
Yeast: White Labs Liquid American Hefe-Weizen Yeast
