Beano IPA Low Carb Beer

This is a Low Carb version of a West Coast IPA. It is based upon a recent article in "Brew Your Own" magazine.

Beer: Beano IPA Low Carb Beer Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 39 IBU
OG: 1.068 FG: 1.006
Alcohol: 8.0% v/v (6.2% w/w)
Water: Good old Kansas City tap water.
Grain: 12 oz. American crystal 40L
8 oz. Belgian CaraMunich
Steep: Steep grains for 30 minutes @ 151°.
Boil: 60 minutes SG 1.113 3 gallons
6 lb. 11 oz. Light malt extract
2 lb. Extra light DME
Irish moss @ 15 min. left.
Hops: .5 oz. Galena (10.5% AA, 60 min.)
.5 oz. Columbus (14.3% AA, 60 min.)
.5 oz. Galena (10.5% AA, 30 min.)
.5 oz. Columbus (14.3% AA, 15 min.)
1 oz. Galena (aroma)
Yeast: WLP 001 California Ale Yeast. Didn't have time for a starter.
Log: Brewed on 8/3/03. 8/08/03: Racked to secondary and added 4 crushed "Beano" tablets. Added dry hops, 1 oz. Galena. Started fermenting again after about 24 hours. Active fermentation for another 7 days. 8/16/03: In the original recipe the FG was supposed to be 1.018, when this secondary fermentation was complete the FG was 1.006! The Beano tablets increased the alcohol content by 1.6% ! The beer looks normal, will rack to a tertiary today and add gelatin prior to bottling since it is a bit cloudy right now.
Carbonation: 5 oz. corn sugar.
