Nutter Brown Beer

High alcohol brown ale with lots of malt and nice hop nose.

Type: Extract w/grain Size: 5.5 gallons
Color:
27 HCU (~14 SRM)
Bitterness: 42 IBU
OG: 1.072 FG: 1.012
Alcohol: 7.8% v/v (6.1% w/w)
Grain: 1 lb. American crystal 20L
1 lb. Flaked oats
Steep: Hold crushed grains and oats @ 150F for 30 minutes and pull.
Boil: 90 minutes SG 1.100 4 gallons
9.9 lb. Amber malt extract
1 lb. Honey
Moss Last 15 min.
Immersion chiller last 15 min.
Add Cascade hops when heat is turned off.
Hops: 2 oz. Cascade (5.2% AA, 60 min.)
1 oz. Cascade (5.2% AA, 30 min.)
1 oz. Willamette (5.6% AA, 30 min.)
1 oz. Cascade (5.2% AA, 1 min.)
Yeast: American 1056 yeast, stepped up 3 times to yeild 5-6 oz of pure yeast.
Log: Primary 1 week @ 68F
Secondary 2 weeks @ 63F
After 2 weeks in secondary place in Fridge for 10 days
@ 34F to let yeast drop out and clear bright.
Keg and let sit @ 40F for 3 weeks before sampling.
Carbonation: 2.0 volumes Keg: 4.3 psi @ 34°F
