Bevingtons Blissful Cider

This cider is more like an apple wine or wine cooler. It is very good and a couple glasses of this stuff will have you talking to Johnny Appleseed.

Boil: minutes SG - -
You only need to boil the 5 gallons of local cider if it is unpasteurized. If it is make sure you boil for 15 minutes in order to kill all of the wild yeast that may cause off flavors.
Hops:
Yeast: Used Red Star Champaign yeast without starter.
Log: NOTE: Color and Gravity readings above are not true to this recipe. I only filled them in order to continue posting this extraordinary recipe.

Pour the 5 gallons of local cider in a 6 1/2 glass carboy. Add the 1 tsp. of allspice to the primary. Follow the directions on the yeast packet and add to carboy. Place bubbler on top and let it go for two weeks or longer. CAUTION: My primary bubbled over and made a mess!!! You may want to make a blow-off tube just in case. Even though my primary bubbled over I still kept it going (all the while fearful of contamination.) After two weeks I racked the cider on top of the added 2 concentrated cans of apple juice and let it go for another week. I then poured the remaining cans of concentrate (2 Apple and 2 Berry)into my keg and racked the cider on top (You actually get about 5 1/2 gallons in the keg). Now seal the keg and shake vigorously for about 5 minutes mixing all ingrediants. Open the pop valve and release any trapped air. Finally proceed by attaching your co2 tank to your keg and pressurize 10 PSI for about 10 days. Carbonation should result in a Champaign type of sparkle at the end of you ten day wait. Sit back and enjoy, but only one glass at a time. I can promise you that after about 2 glasses you will definately feel the effects of Bevingtons Blissful Cider.
Carbonation: 10.0 volumes
Tasting: Wouldn't change a thing, except next time I will pause between glasses. I drank three in a row feeling no effect until I tried to stand....very bad idea. Enjoy! Give me an e-mail and tell me what you thought.
