Orange Honey Ale

I borrowed most of this recipe from another that is posted here. I changed the hops and a couple of other minor items. Had original gravity of 1.072 and finishing of 1.007!

Beer: Orange Honey Ale Style: Honey Ale
Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 26 IBU
OG: 1.071 FG: 1.010
Alcohol: 7.9% v/v (6.2% w/w)
Grain: 1 lb. American crystal 20L
Steep: Steeped the grains for 30 minutes at 150° or so. Sparged with an extra gallon of water at 170°.
Boil: 65 minutes SG 1.071 5 gallons
4 lb. Light malt extract
2 lb. Light dry malt extract
2 lb. Honey
8 oz. Wheat extract
Normal boil for 60 minutes or so then added the honey and boiled for about another 5 or so. Added irish moss with 15 minutes left in boil.
Hops: .5 oz. Cascade (6% AA, 60 min.)
.5 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 60 min.)
.5 oz. Cascade (aroma)
Yeast: I used White Labs pitchable German Ale yeast for a quick starting yeast.
Log: Fermented for 7 days at ~ 70° then racked to secondary and fermented for another 14 days before kegging.
Carbonation: Used DME to carbonate in keg, after 8 days force carbonated at 15psi at 36°.
Tasting: This beer is really good, although there is a little chill haze. Fairly light orange aroma and taste with a pretty good body. Retains a creamy head (mostly due to using DME when carbonating). Be careful how much you drink at one time since you cannot tell by the taste that this beer has about 8% alcohol. Great for summertime.
