Nicht Aecht aber Schlenkerla

This is a combination of a recipe suggested by David Cryer for a Schlenkerla clone, and a recipe on the Weyermann website (www.weyermannmalt.com) for a "1903 Weyermann Schlotfegerla".

Color:
35 HCU (~17 SRM)
Bitterness: 23 IBU
OG: 1.051 FG: 1.012
Alcohol: 5.0% v/v (3.9% w/w)
Grain: 1.5kg Weyermann Wheat Malt Light
1.5kg Weyermann Wheat Malt Dark
1.5kg Weyermann Beechwood Smoked
0.5kg Weyermann Caramel Wheat
Mash: 79% efficiency
Mash-in with 14.3 litres of water at 60°C
Rest for 20mins at 60°C
Raise mash to 64°C
Rest for 20mins at 64°C
Raise mash to 72°C
Rest for 30mins at 72°C
Iodine test as normal
Raise mash to 78°C for mash-out.

Allow 60 minutes for first wort run-off of about 12 litres.
3 sparges of 4.5 litres each, for 95 minutes total.
Boil: 90 minutes SG 1.048 25 liters
Hops: 30g Pacific Hallertauer (7% AA, 60 min.)
Yeast: Saflager W-34/70
Log: Keg when SG drops to 1018. Lager at 1°C.
Carbonation: If you don't keg or use conditioning tank as above, then try using half a teaspoon of sugar per 750ml bottle.
