8 oz. Belgian CaraVienne
2 lb. Belgian Pilsner
4 oz. Flaked wheat
Mash: 75% efficiency
mash at 150° for 60 minutes.
Boil: 120 minutes SG 1.125 3 gallons
6 lb. Light malt extract
.5 lb. Belgian candi sugar
Hops: 1 oz. Styrian Goldings (5.5% AA, 120 min.)
.5 oz. Hallertauer (4.25% AA, 15 min.)
1 oz. Hallertauer Hersbrucker (5% AA, 15 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Hallertauer (aroma)
.5 oz. Saaz (aroma)
Yeast: White Labs Belgian Ale
Log: served with an infusion of ginger, grains of paradise, coriander and curacao orange peel.
Carbonation: 2.5 volumes Cane Sugar: 3.85 oz. for 5 gallons @ 60°F
primed w/ 4 oz. candi sugar
