OG: 1.057 FG: 1.012
Alcohol: 5.9% v/v (4.6% w/w)
Grain: 9 lb. American 2-row
8 oz. American Munich
8 oz. American crystal 120L
8 oz. Dextrine malt (Cara-Pils)
4 oz. American chocolate
Mash: 75% efficiency
Infussion @ 154f for one hour
Boil: 60 minutes SG 1.057 6.5 gallons
8 oz. Light dry malt extract
8 oz. Brown sugar
8 oz. Honey
8 oz. Maple syrup
Use 2 tbls. of ground allspice at flameout.
Hops: 1 oz. Cascade (6% AA, 60 min.)
.5 oz. Centennial (10.5% AA, 60 min.)
1 oz. Styrian Goldings (5.5% AA, 60 min.)
Yeast: White Labs British Ale (2 pints slurry from batch made two days previously)
Log: Brewed 10/12/02...racked to secondary 10/22/02...allspice evident, but not overpowering. I would not go any less than 2 tbls. Should be good with conditioning.
