Uncle's Memory

This is our attempt at a clone of the St. Ambroise Apricot Wheat we had in Quebec.

Type: Extract w/grain Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 14 IBU
OG: 1.058 FG: 1.010
Alcohol: 6.2% v/v (4.9% w/w)
Water: None. Used water from our spring.
Grain: 1 lb. Belgian aromatic
8 oz. Dextrine malt (Cara-Pils)
Steep: Place grains in steeping bag. When water reaches 165 degrees remove bag and gently sparge with 170 degree water.
Boil: 60 minutes SG 1.097 3 gallons
5 lb. Wheat extract
2 lb. Honey
Add Irish moss with 10 minutes remaining in boil. 1 oz. Kent Goldings added at 60 minutes. 1/2 oz at 15 minutes. Dry hopped with 1 oz. of Kent Goldings after secondary racking.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: Used White Labs American Hefeweizen Ale Yeast WL320 to avoid clove/banana off scents.
Log: Racked on to 3 lbs. of freshly cut apricots with skin removed. Secondary racking included another 2 lbs. of fresh apricots freshly cut with skins removed. All pits were removed.
Carbonation: Used 3/4 cup of priming sugar
Tasting: After secondary racking racking had beautiful apricot aroma. Full bodied with slightly tart apricot flavor.
