Nutty Wheat

This is a simple wheat beer with the addition of almond flavor. Just thought we would give it a try.

8 oz. Flaked wheat

6.3 lb. Wheat extract

.5 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: Used large Wyeast #3056 (Bavarian Wheat)
Log: Added 1 oz. of pure almond extract to secondary. Brewed on 9/19/99, racked after 9 days. Secondary for 17 days.
Carbonation: Use 3/4 cup priming sugar.
Tasting: This tastes like a traditional wheat with a little twist. Banana esters are evident with a very slight almond like aroma. Taste is a little bitter, but I expect it to smooth out with time. Maybe a little too much wheat, may add some light extract next time to reduce wheat content.
