JP's Heiney Weiss

Honey Wheat beer recipes seem to be a dime a dozen, but, as a homebrewer I can't leave well-enough alone. Here's my shot at making something similar to Leinie's Honey Weiss. It's named after my brother-in-law.

Beer: JP's Heiney Weiss Style: American Wheat
Type: Extract Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 14 IBU
OG: 1.048 FG: 1.004
Alcohol: 5.7% v/v (4.5% w/w)
Water: Our water here in Marquette, MI is soft water right from Lake Superior, lightly chlorinated. As far as tap water goes, it's the best water I've ever tasted.
Boil: 75 minutes SG 1.060 4 gallons
1.5 lb. Light dry malt extract
3 lb. Wheat extract
1.5 lb. Honey
I tossed in a teaspoon of Irish Moss with 15 min. left in the boil. The Clover Honey was pasteurized at 160°F, then added to the brew bucket, and the wort was poured on top of that, then the bucket was topped off to 5 gallons. I think that made the OG a little higher than what the Recipator predicted it would be, as I ended up with an OG of 1.053.
Hops: 0.75 oz. Kent Goldings (4.5% AA, 60 min.)
0.50 oz. Kent Goldings (4.5% AA, 15 min.)
Yeast: Two Packets of Munton's dry ale yeast, rehydrated. Wort was cooled to 70°F before pitching the yeast.
Log: Brewed on May 22, 2005.
Racked on May 26, 2005. Gravity at racking was 1.016.
Carbonation: I plan to prime it with 1 cup of corn sugar.
Tasting: I'll let you know in a few weeks.
