FLORIDA SUNSHINE HONEY WHEAT

I LOVE THE TASTE OF AN ORANGE ZEST IN A GLASS OF WHEAT BEER. SO, I ADDED THE ZEST AND THE JUICE OF TWO ORANGES. IT ADDED A FRESH CRISP TASTE ALONG WITH THE ORANGE BLOSSEM HONEY.

Brewer: BILL ERWIN Email: -
Beer: FLORIDA SUNSHINE HONEY WHEAT Style: American Wheat
Type: Extract w/grain Size: 5.5 gallons
Color:
2 HCU (~3 SRM)
Bitterness: 11 IBU
OG: 1.052 FG: 1.012
Alcohol: 5.2% v/v (4.1% w/w)
Water: AS USUAL I USED SOFTENED WATER FROM MY HOUSE SYSTEM.
Grain: 0.77 lb. German Vienna
Steep: STRUCK THE GRAINS WITH COLD WATER RAISED THE TEMP. TO BOILING. I DID AN OPS, I LET THE WATER BOIL PRIOR TO GETTING THE GRAIN OUT.
Boil: 60 minutes SG 1.095 3 gallons
5.11 lb. Wheat extract
2.04 lb. Honey
1t OF IRISH MOSS THE LAST 15 OF THE BOIL. 2 LBS OF ORANGE BLOSSOM HONEY, ZEST AND JUICE LARGE ORANGES.
Hops: 1 oz. Tettnanger (3.8% AA, 60 min.)
.5 oz. Tettnanger (3.8% AA, 15 min.)
Yeast: WHITE LABS WLP 300 (HEFEWEIZEN)
Log: COOLED TO BELOW 80 DEGREES, PITCHED YEAST. PRIMARY (SWAMP METHOD) FEMENTATION LASTED ABOUT 10 DAYS. SECONDARY WAS PLACED INTO REFRIDGERATOR FOR ABOUT 4 DAY, RACKED INTO CORNEY KEG AND FORCED CARBONATED AT ABOUT 25PSI
Carbonation: 2.5 volumes Keg: 14.9 psi @ 45°F
Tasting: AFTER ABOUT 48 HOURS, THE BEER TASTED CRISP WITH A SWEET AFTER NOTE, LOW HOPS WITH NO BITTERNESS. I COULD BARELY MAKE OUT THE ORANGE TASTE. IT SHOULD BE MORE PROMINATE AFTER IT AGES. I WILL NEXT TIME AROUND, AND THERE WILL BE, HOLD THE PRIMARY TEMP. A LITTLE LOWER AND HOLD ON SECONDARY FOR A FEW MORE DAYS, ABOUT 10. I RUSHED IT. I COULD NOT WAIT TO DRINK IT. OVER ALL THE BEER IS PLEASENT AND WILL BE MADE AGAIN AS A SUMMER BEER.
