Windmer Hefeweizen

This is so close it is not even funny. Theirs (The Brothers) has a 1.047 OG and 32 IBU. Personally it is too close to call. Cheers!

Type: All grain Size: 5.0 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 34 IBU
OG: 1.048 FG: 1.011
Alcohol: 4.7% v/v (3.7% w/w)
Water: 1 tsp. gypsum in the mash and another 1/2 tsp into the wort.
Grain: 2 lb. American 2-row
5 lb. Wheat malt
1 lb. American Munich
8 oz. American crystal 40L
Mash: 76% efficiency
Steep the grains in hot tap water for 30 minutes (120?). Raise the temp to 160 and allow to rest for 30 minutes. Sparge with hot tap water.
Boil: 90 minutes SG 1.040 6 gallons
Add the hops in three separate steps as seen above. Don't use a sack for the pellets, allow them to thoroughly mix in the wort.
Hops: 1 oz. Tettnanger (4.5% AA, 90 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: White Labs American Hefeweizen WLP320.
Log: Use 1/2 tsp of Irish Moss...but don't go nuts with it.
