Honey Weizen

A really smooth, tasty beer. Did a variation on this by adding 1 oz. of raspberry extract to the last 2 gallons at bottling time. Leaves a hint of raspberry aftertaste which is quite refreshing!

Alcohol: 5.6% v/v (4.4% w/w)
Grain: 4.0 oz. American crystal 10L
1.0 lb. Dextrine malt (Cara-Pils)
Steep: steep at 160° F for 20 minutes
Boil: 60 minutes SG 1.134 2 gallons
1.0 lb. Light dry malt extract
3.3 lb. Wheat extract
2.0 lb. Honey
add 1 teaspoon Irish Moss at 30 minutes
Hops: 1.03 oz. Cascade (6% AA, 60 min.)
0.51 oz. Willamette (5% AA, 45 min.)
0.51 oz. Willamette (5% AA, 30 min.)
1 oz. Cascade (aroma)
Yeast: 11 grams of ale yeast
Carbonation: Primed with 5 oz. honey and 2 oz. brown sugar.
