Homeland Hefe
This is a Bavarian style Hefeweizen inspired by the Augustiner in Munich, and brewed for my best friend Brenda. This is an awesome Hefe if you enjoy the truly traditional Bavarian style.

| Mash: | 70% efficiency | |||||||
| Infusion mash, 154° for 60 minutes. Mash out up to 162° for 15 minutes. Note: with such a high percentage of German wheat (50%) the mash is pretty thin and the tempreature needs to be monitored closely. | ||||||||
| Boil: | 60 minutes | SG 1.041 | 6 gallons | |||||
| Hops: | 1 oz. Saaz (3.75% AA, 60 min.) .75 oz. Hallertauer (4.25% AA, 15 min.) |

| Yeast: | White Labs Platinum 351 Yeast. I typically use WL300, but went for the extra banana and clove flavors that the 351 brings out. | |||||||
| Log: | Note: Due to the hops shortage I substituted Sterling for Saaz. Sterling has a slightly higher alpha, but it was the recommended alternative. | |||||||
| Carbonation: | Forced CO2, served with 10 lbs of pressure. | |||||||
