Type: Extract w/grain Size: 5.25 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 22 IBU
OG: 1.051 FG: 1.010
Alcohol: 5.3% v/v (4.1% w/w)
Water: House tap water for the boil. Artesian well water for everything else.
Grain: 2 lb. Wheat malt
Steep: One and one half gallons cold water to 104F for 15 minutes. Up to 122F for 15 minutes. Up to 140F for 15 minutes. Up to 152F for 30 minutes. Upt to 170F then flame off and rest for 15 minutes. Rinsed grains with half gallon 177F water into the brew pot.
Boil: 60 minutes SG 1.089 3 gallons
6 lb. Wheat extract
Placed extract in brew pot pan then dumped the hot grain water onto it and stirred to blend. Added enough water to bring it up to 3 gallons. Added the hops according to schedule.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
Yeast: Brand new White Labs WL300 hefeweizen liquid ale yeast. Pitched directly from the vial. I harvested all of the leftover yeast from the secondary. I will get 6 or more batches from this yeast. Sure helps bring the costs down.
Log: Brewed 3-1-07. Secondary 3-7-07. Bottled 3-15-07. 56 twelve ounce bottles.
Carbonation: 5 ounces corn sugar. This just seems to be the right amount for our palletes. It seems light by style but we like it less foamy and bubbly. The last time I used more corn sugar all I got when I poured was a glass of foam and the bottles foamed all over when you opened them.
Tasting: Tasted great while bottling but haven't had any conditioned samples as of yet.
