6 oz. British black patent
Steep: normal steeping
Boil: 60 minutes SG 1.091 3 gallons
3 lb. 3 oz. Light malt extract
3 lb. 3 oz. Wheat extract
9 oz. Honey
Hops: 1 oz. Spalt (6.75% AA, 60 min.)
1 oz. Hallertauer (4.25% AA, 30 min.)
.5 oz. Spalt (6.75% AA, 15 min.)
Yeast: re-pitched Wyeast Weihenstephan Wheat
Log: Brewed on 29 Sep 03. Racked on 7 Oct 03. Bottled 10 Oct 03.
Carbonation: 3.7 volumes Corn Sugar: 7.66 oz. for 5 gallons @ 69°F
Tasting: Very good beer. Srarted out on the "too malty" side, but after 3 months, it developed into a very nice Dark Weizen.
