Hugh Hefner-Weizen

I was shooting for a Pyramid Hefeweizen style and this is close. The yeast was the key!

Beer: Hugh Hefner-Weizen Style: Weizen/Weissbier
Type: Extract w/grain Size: 5 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 14 IBU
OG: 1.050 FG: 1.007
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 4 oz. American crystal 40L
Steep: Placed crystal malt into pot with 3 gallons of water and brought up to @ 210F (20 minutes)
Boil: 60 minutes SG 1.083 3 gallons
6.6 lb. Wheat extract
Didn't use Irish Moss, wanted cloudy.
Hops: 1 oz. Tettnanger (5.2% AA, 45 min.)
1 oz. Cascade (aroma)
Yeast: Hefeweizen Ale Yeast #WLP300 from Whitelabs. Aerated by shaking before and after pitch. Cooled wort by placing in fermenter in the sink with cold water.

Log: 1.059 SG @ 30 Minutes

Brewed on 12-10-00

Cascade hops added at 1 minute and 30 seconds left
Screened off everything before going into the fermenter.

Kegged on 12-18-00 with 2oz corn sugar. Tastes very nice..preliminary tasting.
Carbonation: Force carbed to 25 psi and then backed down to @ 7 psi.
Tasting: Pretty good! Just add a slice of lemon.
