Lump's Hefewiezen

Hope for a pale, somewhat higher in alcohol, berliner weiss.

3 HCU (~3 SRM)
Bitterness: 12 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Water: Hinkley and Schmit Drinking Water
Grain: 1 lb. German Pilsner
2 lb. Wheat malt
Mash: 70% efficiency
Did small step mash with protein rest at 122 degrees for 30 minutes and 45 minutes at 160 degrees.
Boil: 60 minutes SG 1.121 2.5 gallons
6 lb. Wheat extract
No Irish Moss used to promote cloudiness.
Hops: .83 oz. Hallertauer (4.25% AA, 60 min.)
.17 oz. Hallertauer (4.25% AA, 30 min.)
1 oz. Tettnanger (4.5% AA, 30 min.)
Yeast: One pint starter used for Wyeast 3068.
Log: Good aggressive start in the primary after only 4 hours. Plan on kegging with force carbonation.
Carbonation: 3.5 volumes Keg: 24.4 psi @ 42°F
Tasting: Looking forward to a light bodied hefeweizen with the traditional clove and banana flavors found in many of German Wiess beers. We will see!
