Hollowed and Hallowed Pumpkin IPA

Trying an IPA pumpkin ale with more flavor and aroma hops than bittering hops.

26 HCU (~14 SRM)
Bitterness: 72 IBU
OG: 1.092 FG: 1.015
Alcohol: 10.0% v/v (7.8% w/w)
Water: Using RODI water w/0ppm.
Grain: 3 lb. Simpsons Golden Promise
1 lb. Briess Organic Carapils
3 lb. Weyermann Carahell
2 lb. Gambrinus Honey Malt
Steep: Steep grains at 150-155° for 30 minutes. Remove grains and start 60 minute boil.
Boil: 60 minutes SG 1.154 3 gallons
6 lb. Light dry malt extract
2 lb. Corn sugar
Since this is a pumkin ale, bake 15# of cut and cleaned
pumpkins in a 350° oven for 30 minutes. Scrape out and mash the flesh. Add it to the boil with the malt. Be sure to take into account the displacement of water from the additional pumpkin volume.

At 30 minutes add 2 cinnamon sticks. 1 tsp Irish moss, 1 more cinnamon stick 1/8 tsp ground cardamom, 1/2 tsp whole cloves, 1 packed tsp fresh ground ginger, 1/2 whole nutmeg (chopped), 1/8 tsp ground allspice and 1/8 cup pure vanilla extract for last 15 minutes of boil.
Hops: 2 oz. Magnum (13% AA, 60 min.)
1 oz. Cascade (6% AA, 45 min.)
1 oz. Magnum (13% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
Yeast: Used 2 packs of Danstar Nottingham Ale Yeast. Started a starter culture to promote robust fermentation.
Carbonation: For the bottling bring 3/4 cup of corn sugar and 2 cups of water to
a boil.
