Uncle Dunkel Dark v3.0

This is my third attempt at a Dunkel all grain brew. Brewed 10/28/06.

Bitterness: 19 IBU
OG: 1.066 FG: 1.016
Alcohol: 6.5% v/v (5.1% w/w)
Water: All water is RO
Grain: 20 lb. Dingemans Belgian Pale
8.5 lb. German Munich
1.5 lb. Belgian CaraMunich
.5 lb. Weyermann Melandoidin Malt
Mash: 78% efficiency
Mash in at 165°F & rest at 153°-155°F for 1 hour or until conversion. Test w/ Iodine for conversion.
Boil: 90 minutes SG 1.057 15 gallons
1 Tablespoon Irish Moss last 15 min. of boil.
Hops: 2 oz. Tettnanger (whole) (4.5% AA, 60 min.)
2 oz. Hallertauer (whole) (4.1% AA, 30 min.)
Yeast: 3 Qt. starter of Wyeast 2206 Bavarian Lager Yeast.
Log: Primary @ 50-55°F until below 1.020, then lauger @ 35°F until gone.
Carbonation: 2.5 volumes Keg: 20.3 psi @ 55°F
