Windy as Helles

An attempt at something reminiscent of Windhoek Lager--not necessarily a clone. Based on Steve Presley's Just Helles, tweaked for lower alcohol, smaller mash, and available ingredients.

Type: Partial mash Size: 5 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 18 IBU
OG: 1.044 FG: 1.012
Alcohol: 4.1% v/v (3.2% w/w)
Water: 1 tsp gypsum, 2g salt, 5g Epsom salts
Grain: 3 lb. 0 oz. German Pilsner
2 oz. German Munich
4 oz. Dextrine malt (Cara-Pils)
Mash: 85% efficiency
Mash for 60 min @ 152-158° F, add heat to mash-out @ 175° F for 10 min, batch sparge with 2 gallons of 170° water.
Boil: 60 minutes SG 1.034 6.5 gallons
3 lb. 0 oz. Light malt extract
Irish moss last 10 minutes
Hops: .5 oz. Tettnanger (4.5% AA, 60 min.)
.5 oz. Tettnanger (4.5% AA, 30 min.)
.5 oz. Tettnanger (aroma)
Yeast: Bohemian Lager
