Lemon Wheat Steamer

Good summer brew - might be ready in time for July 4th!

Brewer: the Red Stoners Email: -
Beer: Lemon Wheat Steamer Style: California Common
Type: Extract w/grain Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 35 IBU
OG: 1.051 FG: 1.013
Alcohol: 4.9% v/v (3.8% w/w)
Water: Use Poland Spring Water for best results
Grain: 8 oz. American crystal 20L
Steep: Put grain in bag in cold water.
Heat water to 155-158° and
immediately take the pot off the heat.
Steep grain for 40 minutes off the heat.
Boil: 45 minutes SG 1.084 3 gallons
3 lb. Light dry malt extract
3 lb. Wheat extract
Irish Moss for last 15 minutes
Hops: 1. oz. Northern Brewer (8.5% AA, 45 min.)
.5 oz. Northern Brewer (8.5% AA, 35 min.)
2 oz. Cascade (6% AA, 5 min.)
Yeast: Wyeast 2112
Log: Add juice from 3-4 lemons (no pulp or pits!) to hot wort
just before cooling to fermentation temperature.
Carbonation: 6oz corn sugar for priming
