Fiesta Brew

This is a light beer. Much like a Corona or Pacifico.

3 HCU (~3 SRM)
Bitterness: 8 IBU
OG: 1.043 FG: 1.015
Alcohol: 3.6% v/v (2.8% w/w)
Water: 6 gal of distilled water
Grain: 3.0 lb. American 2-row
4 oz. American crystal 10L
8 oz. Flaked corn
8 oz. Flaked rice
Mash: 75% efficiency
Mash specialy grains in sock in 1.5 gal heat at 150° for 90 minutes, sparge with 200° water to make 2.5 gal
Boil: 60 minutes SG 1.094 2.5 gallons
1 lb. Light dry malt extract
1 lb. Rice extract
1 lb. Corn sugar
add DME, solids and hops. Boil for 45 minutes. Add Irish Moss and boil 15 minutes more.
Hops: 1.0 oz. Hallertauer (4.25% AA, 45 min.)
Yeast: 11.0 gms Coopers Ale yeast - pitch yeast at 78°. Agitate well.
Carbonation: Prime brew with 3/4 cup corn sugar and 2 cups of water.
