Pale Steam

This beer may be more of a Steam Beer than a Helles Lager, but the grain bill and the intentions keep it in the lager category.
I view this beer as a back door approach to lagering. I have a fermentation box that does a good job of keeping the temps consistently low, but I'm not sure if I'm quite up to the time committment that lagers usually require. This will be a start and probably close enough.

Bitterness: 38 IBU
OG: 1.050 FG: 1.012
Alcohol: 4.9% v/v (3.9% w/w)
Grain: 0 lb. German Pilsner
1 lb. American Munich
8 oz. Belgian aromatic
8 lb. American 2-row
1 lb. Wheat malt
4 oz. Belgian biscuit
Mash: 70% efficiency
Protein rest @ 120F for 30 minutes.
Mash @ 152F for 30 minutes.
Mash out @ 168F for 10 minutes.
Boil: 60 minutes SG 1.042 6.5 gallons
Irish Moss @ 30 minutes.
Hops: 1 oz. Northern Brewer (7.7% AA, 45 min.)
.5 oz. Northern Brewer (7.7% AA, 20 min.)
.5 oz. Northern Brewer (7.7% AA, 5 min.)
1 oz. Northern Brewer (aroma)
Yeast: Whites Labs 810 SF Lager Yeast. 1 quart starter.
Log: Ferment @ 55 degrees for 10 days.
Dry Hop with 1 oz. Northern Brewer Hops
Secondary @ 55F for 7 days. Polyclar on 4th day.
Bottle with 3/4 c. corn sugar.
Condition for 10 days (or until carbonated) @ 75F.
Lager bottles @ 40F for 2 weeks.
