Bunny Bitter

Our 'house' bitter. A good session beer in the great English tradition.

Type: Extract w/grain Size: 5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 34 IBU
OG: 1.039 FG: 1.010
Alcohol: 3.7% v/v (2.9% w/w)
Grain: 1 lb. British Carastan
Steep: Steep crushed Carastan at 155°F in one gallon of water for 30 minutes.
Boil: 60 minutes SG 1.065 3 gallons
3 lb. Light dry malt extract
1 lb. Cane sugar
Add 1 teaspoon Irish Moss 15 minutes before the end of boil.
Hops: 2 oz. Fuggles (4.5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: Danstar Nottingham is the yeast of choice.
Log: Primary for one week, secondary for two weeks, ready for drinking in four weeks!
Carbonation: Keg and carbonate to about 1.5 volumes CO2.
Tasting: We sometimes vary the bittering hops depending what's on hand. Styrian Goldings work well.
