Alcohol: 3.5% v/v (2.7% w/w)
Water: Adjust to mash pH5.3 with CaCO3 or lactic acid.
Grain: 6 lb. British pale
8 oz. British crystal 50-60L
Mash: 75% efficiency
Mash at 150-2° for 60 min. Mash out at 170°. Sparge with about 12 quarts water.
Boil: 60 minutes SG 1.031 6.0 gallons
Use 1 tsp. Irish Moss in the boil, 15 min. from the end. It helps to rehydrate the IM first.
Hops: 1 oz. EKG (6% AA, 60 min.)
.5 oz. EKG (6% AA, 15 min.)
1 oz. EKG (aroma)
Yeast: Wyeast 1968 in a 1 quart or larger starter.
Log: Dry hop with half of the aroma hops.
Carbonation: Carbonate to 1.8 to 2 volumes (keg) or bottle with 1/2 cup corn sugar.
