IMPERIAL "LITE" CR

Brown rice is to be used in this recipe. Rinse the rice in cold water several times before placing it into the fine mesh boiling bag.

Beer: IMPERIAL "LITE" CR Style: American Premium Lager
Type: Extract w/grain Size: 5.5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 20 IBU
OG: 1.035 FG: 1.008
Alcohol: 3.5% v/v (2.7% w/w)
Water: One teaspoon water hardening salts added to the wort before the boiling starts.
Grain: 2.5 oz. German Pilsner
8 oz. American crystal 40L
2.5 oz. Flaked barley
1 lb. Flaked corn
1 lb. Rice (raw)
Steep: Seep the Crystal in a fine mesh boiling bag until the water starts to boil then remove it.
Boil: 60 minutes SG 1.064 3 gallons
3 lb. Light malt extract
1 lb. Corn sugar
Optional: One teaspoon Irish Moss last ten minutes gives this beer somewhat of a "European" flavor. One Tablespoon Irish Moss give this beer a real good "European" flavor.
Hops: 1 oz. Willamette (5% AA, 60 min.)
.5 oz. Saaz (3.75% AA, 30 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
Yeast: Coopers.
Log: Due to the fine Rice particals in suspension produced in this beer it is best to allow it to stay in the First Fermentation container for at least one week. After one week, Remove to Second Fermentation container with one package of Gelatin per directions for 7 to 10 days. Remove and place in third container with 3/4 cup of Dextrose. Store for 14 days before consuming.
Tasting: Very refreshing light beer with a unique enjoyable flavor.
