Beer: IMPERIAL CR Style: American Light Lager
Type: Extract w/grain Size: 5.5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 29 IBU
OG: 1.037 FG: 1.008
Alcohol: 3.7% v/v (2.9% w/w)
Grain: 2.5 oz. German Pilsner
8 oz. American crystal 40
2.25 oz. Flaked barley
1 lb. Flaked corn
28 oz. Rice (brown)
Steep: Seep Crystal in cold water and when the water starts boiling, remove it.
Boil: 60 minutes SG 1.068 3 gallons
3 lb. Light malt extract
1 lb. Corn sugar
(Optional) - 1 teaspoon of Irish Moss can be added to the wort the last 10 minutes of boiling to give this beer a more "European" taste.
Hops: 1 oz. Willamette (5% AA, 60 min.)
1 oz. Hallertauer Hersbrucker (5% AA, 30 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
Yeast: Coopers yeast is excellant for this beer.
Log: First Fermentation container for 5 - 7 days. Second Fermentation for one week to ten days with one package of gelatin per direction on package dispensed in it due to the rice particles. Remove batch into another Container with 1 cup of dissolved Dextrose stirred into it and bottle. I always bottle my Beer into Quart bottles to reduce the labor, etc. -
Tasting: This should produce a real fine smooth, light favorful beer that will taste as close to Costa Rican "IMPERIAL" as you are going to get!
