Mock Bock Bock

This is my attempt at a malty ale that hopefully will imitate a lager. The grain bill reflects mostly German malts, with a few tried and true others for balance. Besides, the whole range of the german malts is very hard to find. The cashews here are illegal and immoral concerning German brewing, but I'm American.

Alcohol: 6.3% v/v (4.9% w/w)
Water: 80%RO water, with about 20% sulphite hard tap water.
Grain: 12 oz. American 2-row
1 lb. British pale (Marris Otter)
2 lb. German Pilsner
4 oz. Wheat malt
12 oz. German Vienna
12 oz. German Munich
3 oz. Belgian biscuit
4 oz. Belgian CaraMunich
6 oz. Belgian CaraVienne
6 oz. Cashews, toasted 350 10 min.
3 oz. British crystal 70L
1 oz. German Rauch Malt
2 oz. Flaked oats
2 oz. Flaked wheat
1 oz. Belgian Special B
Mash: 72% efficiency
100 acid rest 30 min., 5 min. at 112, 25 min at 127, 5 min. at 156, followed by 90 min. at 152.
Boil: 950 minutes SG 1.054 3.4 gallons
Irish moss at 20 and 10 min. near end of boil.
Hops: .1 oz. Hallertauer (5.3% AA, 45 min.)
.1 oz. Ultra (alpha high? old hops?) (6.1% AA, 45 min.)
.1 oz. Hallertauer (5.3% AA, 30 min.)
.1 oz. Ultra (alpha high? old hops?) (6.1% AA, 30 min.)
.3 oz. Hallertauer (5.3% AA, 20 min.)
.3 oz. Ultra (alpha high? old hops?) (6.1% AA, 20 min.)
Yeast: WhiteLabs 029 German Ale/Kolsch yeast.
Log: Brew date 7-18/19-00.
Carbonation: To be bottled with rate of 3/4ths cup corn sugar per 5 gallon.
Tasting: Excellent. Strong, but very lager like. Touch of sweetness. The cashews caused some haze, I don't recommend their use unless you like clarification and filtering.
