Alcohol: 4.7% v/v (3.7% w/w)
Water: Use soft water (filtered or 50% distilled/50% filtered)
Grain: 9 lb. 8 oz. German Pilsner
8 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Protein rest 122°F for 30 min
Pull first decoction, ~40% of thickest mash
Sacc. rest 152°F for 60 min or until conversion
Pull second decoction, ~30% of thinnest mash
Mash out at 168°F for 15 min
Sparge at 170°F for 60 min
Boil: 60 minutes SG 1.044 6.5 gallons
Irish moss at 15 min
Hops: 2 oz. Saaz (3.5% AA, 60 min.)
1.5 oz. Saaz (3.5% AA, 45 min.)
1 oz. Saaz (3.5% AA, 15 min.)
1 oz. Saaz (aroma)
Yeast: Wyeast 2278 Czech Pils; pitch 2-qt starter
Log: Primary 14 days at 53°F
Secondary 21 days at 40°F
Carbonation: 2.5 volumes Corn Sugar: 3.07 oz. for 5.5 gallons @ 40°F
