#125 Power Out Pilsner

Bitterness: 30 IBU
OG: 1.062 FG: 1.017
Alcohol: 5.8% v/v (4.5% w/w)
Water: Soft water;
Grain: 8 lb. German Pilsner
1 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Add grains to 9 Qts water for 15 min acid rest at 102-104°;
Add 3 Qts 180°F water to raise temp to 120°F hold for 20 min.;
Add 4-1/2 Qts 205°F water to raise temp to 140°F hold for 10 min.;
Add heat, stirring constantly to 149°F in 4 min. for 45 min sacch rest;
Add heat to 158°F hold for 10 min; Mash out @ 165°F for five minutes.
Sparge with 18 Qts 172°F water.
Boil: 90 minutes SG 1.048 6.5 gallons
1 lb. Rice extract - solids
4 oz. Belgian candi sugar
At 40 Min remaining add Rice syrup solids, invert sugar, 1/4 tsp citric
acid,and 1/8 tsp licorice extract powder.
At 20 remaining add 1/2 tsp Irish Moss powder reconstituted in 1 cup
cold water for 30 min.
Hops: .5 oz. Saaz (2.3% AA, 90 min.)
1.5 oz. Saaz (2.3% AA, 60 min.)
1 oz. Saaz (2.3% AA, 20 min.)
1 oz. Saaz (2.3% AA, 5 min.)
Yeast: Used YCKC L05 Munich Lager yeast from slant to starter ~1 cup.
Pitch at 64°F. Let sit at 55°F for 14 hours before racking & aerating
to primary.
Log: Primary at 50°F for 19 days,(lost power for days, before I got a
generator... hence the name, temp got up to 62°F for 2 days);
Racked to 2ndary and dropped temp to 35-40°F for 14 days; then lager
for 14 days in corny keg at 2.3 vols CO2.
Carbonation: Force 2.3 vols CO2.
Tasting: Just racked to keg... will update wheninfo is avail.
