Water: Acqua filtrata con aggiunta di due cuchiai di gypsum, quattro cucchiaini di cloruro di sodio, un cucchiaio di solfato di magnesio, controllo del PH del mashing a 5,5 con cartina al tornasole e aggiunta eventuale di acido lattico.
Grain: 18kg 700g German Pilsner
800g Wheat malt
900g Dextrine malt (Cara-Pils)
800g Flaked barley
Mash: 73% efficiency
50° - 20'
60° - 20'
65° - 30'
70° - 20'
78° - 15'
Boil: 150 minutes SG 1.035 137 liters
Use gm. 25 of Irish moss the last 15 minutes of boil.
Hops: 133g Northern Brewer (8.5% AA, 90 min.)
95.8g Saaz (3.75% AA, 15 min.)
20g Saaz (aroma)
Yeast: Czech Pils n°2278. I used n°2 starter
Log: Fermentation 12°
Carbonation: 2.5 volumes Dried Malt Extract: 883g for 92 liters @ 12°C
