Perfect Pilsener

I wasnt trying to brew an Imperial, but due to efficiency gains it turned out that way. Therefore, I changed the hop schdule to increase the HBU's given the high alcohol content. This brew was a variation of my regular Pils, which is very drinkable. I'm an IPA guy myself, but my Pils is a big hit with the wife and neighbors - I must admit, I do like the change myself every so often!

4 HCU (~4 SRM)
Bitterness: 40 IBU
OG: 1.072 FG: 1.010
Alcohol: 8.0% v/v (6.3% w/w)
Water: None. Good ole Little Rock City water. Hard and perfect.
Grain: 9 lb. American 2-row
2 lb. German Pilsner
1 lb. American Vienna
.5 lb. Dextrine malt (Cara-Pils)
Mash: 86% efficiency
Mashed @ 153 degrees F. Added "5" to buffer.

Efficiency much better than expected.....usually low 70's, so the alcohol content is very high.
Boil: 70 minutes SG 1.057 7 gallons
Waited 10 minuted into the boil before first hop addition
Hops: 1 oz. Hallertauer (2.7% AA, 60 min.)
1 oz. Hallertauer (3.2% AA, 60 min.)
1 oz. Saaz (4.2% AA, 45 min.)
1 oz. Saaz (4.2% AA, 15 min.)
1 oz. Saaz (3.6% AA, 15 min.)
1 oz. Saaz (aroma)
Yeast: SAF Lager - made starter with 600ml water and 1/2 cup Light Pils Dry Extract
