Strong Scotch Ale

This is my first parcial Mash. Lets see how it turns out.

Type: Partial mash Size: 6.5 gallons
Color:
87 HCU (~32 SRM)
Bitterness: 34 IBU
OG: 1.087 FG: 1.020
Alcohol: 8.6% v/v (6.8% w/w)
Water: going to try --0.5 tsp gypsum and 1 tsp burton salt

keep ph between 5.0 - 5.5
Grain: 6 lb. British pale
.5 lb. Wheat malt
.5 lb. American Munich
2.5 lb. American crystal 10L
.5 lb. American crystal 60L
.5 lb. American chocolate
.5 lb. Roasted barley
.5 lb. Flaked barley
Mash: 80% efficiency
-Prepare 3 gal of water for Mash (check ph level). Cover the mash and hold temperature at 150°-158°F for 60 min
-Prepare 2 gal of sparge water during last 45 min of mash (check ph level). Heat to 160°-170°F.
- After starch conversion (60 min), raise temperature of mash to 160°-170°F and hold for 10-15 min
- Recirculate grain and pour sparge water over it.
Boil: 75 minutes SG 1.113 5 gallons
3 lb. Light malt extract
3.3 lb. Amber malt extract
- Add 1 tsp Irish Moss last 15 min of boil
- Continually add water to boil (keeping boil volume at 5 gal) throughout to keep steady Hop Utilization
- I don't have a brew pot big enough for entire 6.5 gal boil so I add required amount of sterile bottled water to reach 6.5 gal final volume. If you don't use this method you will have to reassess your Hop schedule due to different utilizations
Hops: .75 oz. Chinook (12% AA, 75 min.)
1 oz. Hallertauer (4.25% AA, 75 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 10 min.)
1 oz. Cascade (6% AA, 5 min.)
.25 oz. Chinook (12% AA, 5 min.)
1 oz. Saaz (3.75% AA, 5 min.)
Yeast: Going to try Wyeast Scottish Ale 1728. This yeast is ideally suited for Scottish-style ales and high gravity ales. It can become estery with warm fermentation temperatures. Flocculation: high; apparent attenuation 69-73%. (55-75 F, 13-24 C)

Carbonation: 2.0 volumes Corn Sugar: 3.52 oz. for 6 gallons @ 65°F
or 3/4 a cup Corn Sugar
