Shmass's Strong Ale

This is my attempt at putting together a Strong Ale with some excess ingredients and parts from a kit that I decided not to do...first attempt, so don't know how it will turn out. Used reverse osmosis water and made a 3-step gallon starter for this one. Heavy fermentation kicked off after about 6-8 hours.

This repost is the actual recipe I ended up using. It's in secondary now, down to 1.026...

Type: Extract w/grain Size: 5 gallons
Color:
62 HCU (~25 SRM)
Bitterness: 55 IBU
OG: 1.081 FG: 1.022
Alcohol: 7.6% v/v (6.0% w/w)
Water: Reverse Osmosis
Grain: 8 oz. American crystal 60L
4 oz. Belgian Special B
8 oz. Dextrine malt (Cara-Pils)
Steep: Steeping will be for 30 minutes @ 155 degrees
Boil: 60 minutes SG 1.062 6.5 gallons
6 lb. Amber malt extract
3.3 lb. Dark malt extract
1 lb. Light dry malt extract
Hops: 1 oz. Northern Brewer (7.7% AA, 60 min.)
1 oz. Northern Brewer (7.7% AA, 30 min.)
1 oz. Tettnanger (5.3% AA, 15 min.)
Yeast: Wyeast 1728 Scottish Ale - smack pack
Carbonation: will carbonate with 3/4 to 1 cup of corn sugar
