Type: Partial mash Size: 5 gallons
Color:
75 HCU (~29 SRM)
Bitterness: 22 IBU
OG: 1.101 FG: 1.021
Alcohol: 10.3% v/v (8.1% w/w)
Water: gypsum, calcium carbonate added to Pure Drinking Water
Grain: 4.25 lb. American 2-row(1/4lbs toasted)
.25 lb. Wheat malt
.5 lb. American crystal 60L
.25 lb. American black patent
.25 lb. Roasted barley
.25 lb. American crystal 120L
Mash: 70% efficiency
two step infusion
Strike in at 156 and hold for 1 hour
mash out at 162 for 10 minutes
Boil: 75 minutes SG 1.112 4.5 gallons
8 lb. Light dry malt extract
add irish moss last 10 minutes
Hops: 1 oz. Fuggles (4.75% AA, 75 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
.5 oz. Kent Goldings (5% AA, 30 min.)
Yeast: brittish ale yeast(white lab pitchable, 1 1/2 tubes)
Log: primary fermentation for 3 weeks at 65
secondary fermentation for 1 week at 65
Cold condition in bottles at 35 for 6 weeks to one year.
Or get greedy and keg condition for a week and force co2.
Carbonation: force carbonation.
Tasting: Amped up version of old recipe. Very smooth and malty. A wee bit heavier and darker than style suggest. Great winter brew.
