Scottish light ale

Bitterness: 17 IBU
OG: 1.032 FG: 1.008
Alcohol: 3.1% v/v (2.4% w/w)
Grain: 8 oz. American crystal 10L
4 oz. Dextrine malt (Cara-Pils)
1 oz. American chocolate
Steep: Lightly crack malted barley put in a grain bag and heat w/ 1.5 gals
of cold water. Slowly bring to boil over 30-45 minutes. Remove grain
bag and add liquid and dry malt extracts and brown sugar. Bring back
to boil.
Boil: 60 minutes SG 1.106 1.5 gallons
5 oz. Light dry malt extract
4 oz. Brown sugar
3.3 lb. Amber malt extract
Add fruggles hops and boil 45 minutes. Boil 2 oz of dried oak chips
for 10 minutes. Strain and add water to wort 60 minute boil.
In the last 5 minutes of boil add the dextrine malt.
Hops: 1 oz. Fuggles (4.75% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
Yeast: Wyest Scottish 1728 or White labs WLP028 Edinburgh Ale Yeast.
Pitch with yeast starter.
Carbonation: 1.5 volumes Keg: 1.4 psi @ 40°F
Dried Malt Extract: 3.08 oz. for 5 gallons @ 70°F
