Mash: 77% efficiency
Mash in 3 gallons 125° water - rest 118° 10 minutes
Add 1.5 gallons 168° water - rest 140° 10 minutes
Add 2.0 gallons 185° water - rest 148° 2 hours
Sparge 3 gallons 180° water - 30 minutes
Boil: 90 minutes SG 1.038 7.5 gallons
Irish moss at 10 minutes
Hops: .5 oz. Centennial (8.9% AA, 60 min.)
.5 oz. Centennial (aroma)
Yeast: 1 pack Safbrew T-58 rehydrated in 1 qt. cooled wort 30 minutes
Log: fermented at 68°
Note: Amarillo hops actually used.
Collected 2 qts. gyle pre-pitch for krausening
Actual SG 1.045
Carbonation: Krausen in keg w/ 1.5 qts strained gyle.natural carbonate for 2 weeks in keg.
Tasting: First of spring/summer session beers.
