Biker Pale Ale

This is my second attempt at all-grain. I am hoping for an APA with a little more hop bitterness than the style calls for, but hey, since when did Biker's gave a damn about style? ;)

Beer: Biker Pale Ale Style: American Pale Ale
Type: All grain Size: 5 gallons
Color:
15 HCU (~10 SRM)
Bitterness: 48 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.4% v/v (4.3% w/w)
Grain: 8.5 lb. American 2-row
1 lb. Wheat malt
1 lb. British crystal 50-60L
Mash: 70% efficiency
90 min at 152°f, in 1.5 qt per pound (approx 4gl). Sparged with 4gl at 180°f to collect just under 7gl.
Boil: 60 min minutes SG 1.039 7 gallons
1tsp Irish moss for last 5 min.
.5 oz cascades at flame out.
2 oz cascades and 1 oz perles dry hop in secondary.
Hops: 2 oz. Cascade (5.4% AA, 60 min.)
.5 oz. Cascade (5.4% AA, 5 min.)
2.5 oz. Cascade (aroma)
1 oz. Perle (aroma)
Yeast: Yeastlab A02 American Ale yeast, 1 qt starter made from washed yeast harvested from Cream Ale primary.
Log: Brewed on 13 Jun 99, fermenting at 68-70°f. Expect to transfer to secondary and dry hop in approx 5-7 days.
Carbonation: 2.5 volumes Corn Sugar: 4.25 oz. for 4.75 gallons @ 70°F
