Ghandi's Pissed IPA

This was supposed to be a partial mash. Didn't know what I was doing, ended up steeping 6 pounds of grain (BIG teabag)....and it turned out fantastic.

Type: Extract w/grain Size: 5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 87 IBU
OG: 1.065 FG: 1.012
Alcohol: 6.8% v/v (5.4% w/w)
Water: plain old Monroe County (NY) Water
Grain: 4 lb. British pale
1 lb. British mild
1 lb. American victory
Steep: Ended up steeping grains in 2 grain bags in 2 gallons of water for 30 minutes at 130°F for 30 minutes, Raise temperature to 155°F for 30 minutes. Strained and sparged (poorly) with 1.5 gallons 170°F water.
Boil: 90 minutes SG 1.093 3.5 gallons
5 lb. Light dry malt extract
First hop addition is 15 mintues after boil commences.
Centennial and Chinook hops are in hops bag. NB and Cascade hops are loose in the boil.
at 10 minutes, 1 tsp Irish Moss and 1 tsp Yeast Nutrient added to boil
Hops: 1 oz. Chinook (12% AA, 75 min.)
1 oz. Centennial (10.5% AA, 50 min.)
.5 oz. Chinook (12% AA, 50 min.)
.5 oz. Centennial (10.5% AA, 30 min.)
1 oz. Northern Brewer (8.5% AA, 20 min.)
.5 oz. Cascade (aroma)
Yeast: WYeast 1056 in 1/2 gallon starter
Log: Added wort to 2 gallons cold water and topped off to 5 gallons.
O.G. was actually 1.056
Brewed 1.21.06
Drop hopped in primary 1.26.06 for 1 week.
FG on bottling day was 1.012. Final ABV 5.85%
Carbonation: 1.25 cup Light DME boiled in 1 pint water for 10 minutes.
Tasting: First tasting was 2.10.06. Heavy on citrus (grapefruit) taste and aroma.
pre competition tasting 3.19.06. Citrus nose and flavor has died down to acceptable levels. Still packs good bitterness, with a malt coming through for the finish
