Alcohol: 5.5% v/v (4.3% w/w)
Grain: 4 lb. American 2-row
1 lb. American Munich
1 lb. American Vienna
.25 lb. American crystal 40L
.25 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Single-infusion mash: Saccharification @ 152°F-154°F for 60 min. Collect runnings. Batch sparge to get mash up to 172°F and rest for 10-15 minutes. Collect 2nd runnings.
Boil: 60 minutes SG 1.062 4.25 gallons
2 lb. Light dry malt extract
Add 2 lbs DME at beginning of boil. Irish Moss at 15 min.
Hops: .25 oz. Cascade (6.6% AA, 60 min.)
1 oz. Perle (7.2% AA, 60 min.)
.25 oz. Amarillo (8.9% AA, 60 min.)
.25 oz. Cascade (6.6% AA, 30 min.)
.25 oz. Amarillo (8.9% AA, 30 min.)
.50 oz. Cascade (6.6% AA, 15 min.)
.50 oz. Amarillo (8.9% AA, 15 min.)
Yeast: Wyeast #1056 American Ale
Log: Dry hop using an additional .50 oz of Cascade and .50 oz of Amarillo.
Carbonation: For approx. 2.5 Volumes of CO2, add 4.25 oz corn sugar for bottling 5 gallons.
