More Better Sierra Nevada Clone

This is a modification of a clone recipie I got from my local brew shop. I modified it with an extra ounce of cascade, dry hopped. I think this more accurately represents the Sierra Nevada style, and is more suited to my tastes.

Beer: More Better Sierra Nevada Clone Style: American Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 43 IBU
OG: 1.051 FG: 1.010
Alcohol: 5.3% v/v (4.2% w/w)
Water: Reverse-osmosis filtered water.
Grain: 8 oz. American 2-row
8 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
Steep: Bring water tempature to 155° Add grains in grain sock and steep for 30 minutes.
Boil: 60 minutes SG 1.051 5 gallons
6 lb. 8 oz. Light malt extract
1 oz Perle (bittering) 60 minutes
1 oz Cascade 30 minutes
1/2 oz cascade and 1 tsp irish moss 15 minutes
1/2 oz cascade at end of boil, then shut off heat
1 oz cascade dry hopped into primary
Hops: 1 oz. Perle (8% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
2 oz. Cascade (aroma)
Yeast: Windsor ale yeast (dry) prepared as per packet instructions.
Log: Dry hop in primary fermenter. Three days in the primary, about 10 days in the secondary.
Carbonation: 3/4 cup corn sugar, as per normal bottling practice.
Tasting: I love this stuff. Good bitterness, faithful to Sierra Nevada. The dry hopping in the primary adds a wonderful nose when opened, but I'm an incurable hophead, so I like 'em that way. It needs about three weeks or so in the bottle to mellow out properly, but every batch I've made of this had died young, so I really have no idea what it would taste like three weeks down the road. It has a noticable citrusy character common with the cascade hops, that should fade in a few weeks. I had a friend of mine, who drinks nothing but sierra nevada, comment very favorably on this beer.
