1st All-Grain Pale

Super basic recipe to refine our all-grain skills as beginners, please email me before 7/5/02 if you see something totally wrong

Beer: 1st All-Grain Pale Style: American Pale Ale
Type: All grain Size: 11 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 41 IBU
OG: 1.069 FG: 1.018
Alcohol: 6.5% v/v (5.1% w/w)
Water: filtered San Diego tap water, 1 tbls gypsum
Grain: 24 lb. American 2-row
Mash: 85% efficiency
mash in with 8 gallons @ 125° (1qt/lb of grain)
hold at 125° for 30 minutes (protein rest)
gently raise to 155° with recirculation
hold at 155° for 60 minutes (starch conversion)
gently raise to 165° with recirculation (mash out)
sparge with 5 gallons @170° for 1 hour
Collect 1st 12 gallons to boil kettle
Boil: 90 minutes SG 1.063 12 gallons
Irish Moss last 15 minutes
Hops: 2 oz. Kent Goldings (5% AA, 60 min.)
2 oz. Kent Goldings (5% AA, 40 min.)
2 oz. Kent Goldings (5% AA, 20 min.)
1 oz. Centennial (9% AA, 5 min.)
1 oz. Centennial (aroma)
Yeast: White Labs WLP001 California Ale startered in 750ml sterile wort, 1 tube/starter per carboy
