1.25 lb. American Vienna
.75 lb. American crystal 40L
Mash: 70% efficiency
Add 6.0 gallons water at 157°F. to 18.75 lbs grain at 75°F. for a strike temperature of 146°F. Raise temperature to 152°F. and hold for 45-60 minutes or until iodine test is negative. Increase temperature to 170°F., transfer to sparger and sparge with 170°F. water for a boil volume of 12.0 gallons.
Boil: 90 minutes SG 1.040 12 gallons
Add 1.0 Tbl. Irish Moss 15 minutes before end of boil.
Hops: 2.5 oz. Cascade (5.9% AA, 60 min.)
1 oz. Cascade (5.9% AA, 15 min.)
1 oz. Cascade (5.9% AA, 5 min.)
1.5 oz. Cascade (aroma)
Yeast: WLP 001 - California Ale - 2.0 Each
Log: 1. Mash and sparge to a volume of 12.0 gallons.
2. Bring to a boil, boil for 30 minutes and add 2.5 oz. Cascade hop pellets. Boil for 45 minutes.
3. Add 1.0 oz. Cascade hop pellets and 1.0 Tbl. Irish Moss. Boil for 10 minutes.
4. Add 1.0 oz. Cascade hop pellets and boil for 5 minutes.
5. Total boil is 90 minutes.
6. Transfer to fermenter; cool to 70°F.; oxygenate and pitch yeast.
7. Drop trub after one day (cone-shaped fermenter).
8. Ferment for one week, rack into two 5.0 gallon carboys with 0.75 whole Cascade hops in each.
9. Secondary for one week; prime with corn sugar and bottle.
Carbonation: 2.2 volumes Corn Sugar: 6.88 oz. for 9 gallons @ 75°F
0.75 oz. corn sugar/gallon of beer.
