Goose Island Special Pale Clone

Clone of Goose Island Brewpub's Special Pale Ale. The 10 gallon batch will be split in two and pitched with While Lab's California Ale V and WL British Ale Yeast

Bitterness: 47 IBU
OG: 1.056 FG: 1.015
Alcohol: 5.3% v/v (4.2% w/w)
Water: 15 gallons of Hinkl;ey and Schmidt
Grain: 24 lb. Belgian pale
12 oz. Belgian Special B
Mash: 71% efficiency
Single step mash at 158 degrees for 2 hours 30 minutes
Boil: 60 minutes SG 1.046 14 gallons
Three tablespoons of Irish Moss at last 15 minutes of boil
Hops: 1 oz. Centennial (10.1% AA, 60 min.)
1 oz. Styrian Goldings (4.0% AA, 60 min.)
1 oz. Styrian Goldings (4.0% AA, 30 min.)
1 oz. Chinook (11.3% AA, 15 min.)
1 oz. Columbus (15% AA, 15 min.)
1 oz. Centennial (aroma)
1 oz. Chinook (aroma)
1 oz. Columbus (aroma)
Yeast: White Labs Calfornia Ale V and White Labs British Ale Yeast
Log: We missed the last addition of hops at cool down and added when the wort had been cooled to around 100 degrees. Currently their is significant fermentation activity with temp. at 65 degrees.
